Superfoods Salad with Citrus Vinaigrette

Vitamins are organic compounds that are essential in small amounts to our diet. Minerals are also essential and critical to our diets in the same way that vitamins are. They are critical to physiological functioning of our bodies. When they are absent from our diet, many side effects can occur as a result of deficiency.
Vitamins & Minerals are either fat soluble or water soluble.

 

A Vitamin & Mineral packed day: Breakfast: Whole Grain with fresh fruit. Lunch: Nutrient packed salad, leafy greens, nuts & seeds, avocados, fruit & legumes. Dinner: Protein source, leafy green vegetables, beans or sweet potatoes, or wild or brown rice (or other whole grain of choice).

Summer Superfood Salad
Superfoods Salad with Citrus Vinaigrette:

1c cooked & chilled whole grain of choice

4 Kiwi, diced

1c Blueberries

1c Grape Tomatoes diced

1-2 Avocados, diced

3c Leafy Greens

1/4c Raw Pumpkin Seeds

1/4c Raw Silvered Almonds

For Dressing:

1 Small Shallot finely chopped

3/4c Olive Oil

1/4c White Wine Vin.

3 Tbsp. Fresh Lemon Juice

2 Tbsp. Fresh Orange Juice

¼ tsp lemon zest

Prepare your grain according to directions, set aside and chill. Combine 5 ingredients for dressing in a small mason jar and shake, salt and pepper to taste. Set aside. In a large bowl combine kiwi, blueberries, tomatoes, greens and chilled grain. When you are ready to serve add avocado, nuts & seeds. Mix in desired amount of dressing. Enjoy!
