If you attend Sunday morning Yoga at Imagine you know that Jackie brings us in yummy treats to enjoy with a cup of coffee after class. A few weeks ago she brought in a batch of homemade baked oatmeal and it was a hit! We had several requests for the recipe so we thought we would share it with everyone on the blog:

2 1/4 c oats
2 tbsp coconut or brown sugar
2 tsp cinnamon
1 tsp baking powder
1/2 tsp ginger
1/2 tsp sea salt
1/2 tsp nutmeg
2 cups almond milk
1/2 cup unsweetened applesauce or canola oil
1/4 cup pure maple syrup
2 tsp vanilla
3 apples, peeled and diced
1/2 cup chopped walnuts

Preheat oven at 375; grease casserole dish
Combine oats,sugar, cinnamon, baking powder, ginger, salt, and nutmeg.
Combine applesauce, milk, syrup and vanilla in separate bowl.
Pour liquid mixture over oat mixture and stir to combine.  Fold in apples and nuts.
Pour into casserole dish (will be soupy) and bake for 45 min. until apples are fork soft.
